Thirsty nights make for hungry hangovers, and in both cases, the guys of L’Inconnu and the Roseval have you covered. Sink your teeth into their newest enterprise, The Sunken Chip, serving up the most authentic fish and chips you’ll find on this side of the English Channel. It’s good old-fashioned British comfort food that you can eat in or take away to nosh on next to Canal Saint Martin.

The Anglo/Frenchie crew has dropped anchor in a small yet spic-and-span space on rue des Vinaigriers, with counter service and three family-style picnic tables inside for those who can’t wait to dig in. Crisp white-tiled walls, bright lighting and servers wearing nautical-stripe shirts give it a distinct seaside feel reminiscent of your last vacation or the one you’re waiting to take.

Choose from three varieties of poisson including hake, yellow or black pollock, all battered and cooked to greasy perfection with that crunchy texture on the outside balanced with a steaming flaky interior. Make it a menu with the obligatory “chips” (thick-cut the way they should be and in generous portions), mushy peas (a purée of peas garnished with fresh herbs that goes surprisingly well with the rest), and a fizzy English beverage (Ben Shaws Cream Soda, Vimto, Lilt, etc.) or beer to wash down your mouthfuls of crispy, salty indulgence.

Other interesting menu choices include fish nuggets — monkfish cheeks coated in the signature house breading, fried English sausages, the “Chip Butty” — aka a fry sandwich (yes, you read that right), and side items that are apparently de rigueur to accompany your British grub : house tartar sauce and vinegar-marinated onions and eggs. We didn’t try the eggs, but there are jars of them lining the back wall, if that should help strike your fancy… Or raid the jars of English bonbons below, if you prefer sweet over sour.

Of course, you can’t eat fish and chips without the necessary condiments, so make sure you dress it all with malt vinegar and ketchup to marry the flavors correctly.

Listen, you’ve gotta get your minimum two servings of fish per week in somewhere, and it’s already better for you than a kebab, so go get your fast-food fix at The Sunken Chip, and tell yourself it’s in honor of the newborn Prince.
