Now that we’ve moved onto a new year, everyone’s rounding up the best bar openings of 2012.  But you know what’s even more interesting than old news? A sneak peek at the most anticipated openings so far for 2013.  So, get ready for some new cocktail experiences coming your way:

Bivalval Imbibing: The creative crew behind Candelaria and Glass has some new surprises in store with their latest venture, Mary Celeste.  They’ll soon be serving up terroir focused oysters sourced from France and beyond alongside their cocktails. The drinks menu will focus on aperitif-style drinks and they’ll also be providing a healthy dose of natural wines and comfort food. Given this group’s reputation and the incoming talent of barman Carlos Madriz (previously of l’Hotel) and chef Haan Palcu-Chang (previously of Le Verre Volé), the Mary Celeste will be an instant hit.

Polynesian Partying: While still retaining a bit of seedy appeal, Pigalle is shaping up to be a prime drinking destination. And now after 60+ years in the neighborhood, Dirty Dick, under the same name but new management, will be bringing a bit of South Pacific style to SoPi. Scotty Schuder (of the UFO) and a talented team are currently putting together a tasty selection of tiki creations and classics with a twist. And, word is they’ll also have a nice fumoir.

Bigger and Better:  Fabien and Edouard, the duo behind l’Entrée des Artistes, created what many consider the ideal bar. It appeals to industry folks, cocktail aficionados and laid back neighborhood locals with its combination of stellar cocktails, spot-on wine selection and damn good food all served up in an ambiance of understated cool. These two have now set their sights on something new and are promising to deliver a much larger and more impressive version of the original. While most of the project is still under wraps and the name has yet to be divulged, these boys are staying up late into the night to develop something undoubtedly cool for your drinking pleasure.

 

New York Attitude: David Costa is bringing a bit of the Big Apple to the City of Light with his bar, Brooklyn. The starting menu will be “simple but good” with about four cocktails.  There will be beer on tap as well as wine with a focus on organic and small producers. A choice of tapas will include the typical French fare such as cheese and charcuterie plates alongside American offerings like veggie burritos and chicken wings. Rather than just court the cocktail crowd, Brooklyn is looking to become an international hub that pulls in an eclectic clientele ready to mix it up and have a good time.

For your Dining Pleasure: Darling of the dining world, Septime, has plans to bring something different to the scene with a new seafood restaurant and bar.  While they stress that it’s more restaurant than bar, they’re developing a cocktail side with drinks that play well with shell fish and South American influenced dishes like ceviche. Plans are still under development, but given the success of their current space, it’s no doubt that they’ll be turning out some interesting tipples.
