Chef P and Hirmane have created the &#8216;Japanese Fricassé,&#8217; a unique twist on the world-famous Tunisian Fricassé, infused with Japanese flavors. To mark the launch, the Jangal DJ Team brought the party to life.</p>

				<content:encoded><![CDATA[<p>A few days ago, at Hugo Denoyer&#8217;s restaurant, Hennessy celebrated their first collaboration with a chef. Hugo Desnoyer paired meat and Cognac Hennessy X.O. : a matured beef steak with a sauce created for the occasion and a glass of Hennessy&#8217;s finest X.O.</p>
<p>This pairing of meat and cognac will be served exclusively at the chefs restaurant starting from November for a whole year.</p>

<p>They  Offer you an unique experience in welcoming gourmet Parisians around food and beer combinations concocted by inventive chefs. For six days, these exceptional guests will offer a culinary program inspired by the Leffe Blonde, Leffe Ruby and Leffe Rituel variants.</p>
<p>Are you a fan of fusion, gourmet or bistronomic cuisine? See you in this new warm and friendly place to enjoy small dishes concocted by the inventive ones Julien and Céline Pham (October 25 and 26), the trendy duo Adrien Larripa and Romain Tischenko (October 27 and 28) and the improvised four-handed Julien Duboué and Alexandre Jonette (October 29 and 30). <p>Since its opening, ISTR is shaking up the established code and and take over the NewYork oyster &amp; cocktail bars &#8220;Way Of Life&#8221;.<br />
The Paris Fashion Week was about to start and ISTR celebrated its 1st birthday party with Paris Oysters &amp; Cocktails lovers.<br />
The progam, 3 celebration days opened to the host, with a dj set by the &#8220;Paris Dernière&#8221; book co-author Max Pasadore till late.<br />
To ended it up the right way for the last night of celebration, ISTR hosted  the Jean Charles de Castelbajac  exhibition&#8221;40 passages&#8221; aftershow party&#8230;</p>

From lunch to dinner or cocktails &amp; oysters experience for pre dinner, Chef Julien Kerwien, former Guy Martin and Joël Robuchon, offer a creative and bold &#8220;surf &amp; turf&#8221; cooking.<br />
For the opening night, the guest got the chance  to discover cocktails, oyster shooters and taste oysters NYC style in a BK univers imagine by the architects from Hecho Inc.<br />
With the talented Sacha Naigard behind the dj booth and its smooth djset, the party gona pretty well in the restaurant turned, for the occasion, into a late bar&#8230;</p>

<p>The second episode of this season is an insane spaghetti western that will delight gastrophiles. The pitch? In the fight against the rampant threat of Triads, two clans have decided to join forces. An improbable marriage between Don Salvatore Rotiroti, Le Fooding Guide’s 2014 best pizzaiole, the boss of Il Brigante… And Sardinian chef Simone Tondo, the godfather of Roseval (winner of Le Fooding Guide’s 2013 best restaurant award). Up against a wall, our two maestros will have to outdo themselves to develop a four-handed pizzanomic menu. Italian accents and shots fired in the kitchen guaranteed!</p>

<p><i>On the eve of the long-awaited Grand Opening of Faust, we caught up with Tajer &amp; Whelan, the Creative Directors of the space to discuss historical monuments and UK Bass…</i></p>
<p>&nbsp;</p>
<p><strong>Ten Days: So, what took you guys so long?!</strong></p>
<p><strong>John Whelan:</strong> Haha, good question –welcome to France I guess! It’s been a massive challenge working on such a prestigious monument. It’s a UNESCO World Heritage site and so the rules and regulations concerning what you can and cannot do are extremely stringent – this necessarily made everything take much longer than usual, as validation was required for every detail.</p>
<p><strong>Ten Days: We’ve been in and had a look, it’s fuckin&#8217; classic! What were the inspirations behind the design?</strong></p>
<p><strong>John Whelan:</strong> Our philosophy is always the same – we’re interested in respecting the heritage of the venue in question. It was the same for Le Pompon, we wanted to restore its original features and only add coherent elements. This approach was re-applied here, so Beaux Arts decorative flourishes and industrial structures were key inspirations, along with Goethe’s ‘Faust’ providing the poetic licence!</p>
<p><strong>Ten Days: <i>Justement, </i>how will Faust differ from Le Pompon?</strong></p>
<p>Charaf Tajer: First of all, Faust is a restaurant, <i>terrasse</i> and club, and so we’re offering more than one experience this time. Le Pompon by contrast is a family affair and the nightlife articulation of our movement ‘PPP’ (Pompon, Pain O Chokolat, Pigalle). Faust is much bigger, and therefore cannot be as exclusive by definition. For this new venture, we want to give people a more diverse programme, but always with the same energy and enthusiasm that characterised our previous venues.</p>
<p>&nbsp;</p>
<p><strong>Ten Days in Paris: So will this affect the music selection?</strong></p>
<p><strong>Charaf Tajer:</strong> Of course. There’s still going to be a fair bit of Hip Hop but the programme will embrace more ‘clubby’ sounds like UK Bass and Electro, in a non-pretentious way <i>bien sur. </i>We want Faust to be a party place, where you can laugh and dance, not stand in a corner and nod your head.</p>

<p><strong>Ten Days: And what’s going on with Le Pompon anyway, is it ever going to reopen?</strong></p>
<p><strong>Charaf Tajer:</strong> For sure! We’ve just been prioritising, that’s all. While we’ve been getting to grips with working on such a different scale, Le Pompon has been touring the world, doing pop ups in New York, Miami, Seoul, Tokyo and Hong Kong to name but a few. We’ll be looking to open Le Pompon in Pigalle once we are happy with how Faust is working out.</p>

<p><strong>Ten Days: And Jackets?</strong></p>
<p><strong> John Whelan:</strong> Same for Jackets. We’re still of the opinion that Paris lacks a stupid rock n’ roll dive bar, so we’ll be addressing that very serious issue in the not too distant future.</p>

<p>From the good people of Pink Flamingo, Floyd’s Bar and Grill is bringing a healthy dose of American BBQ culture to the sad kebab stands of Strasbourg Saint-Denis.</p>
<p>In front, you’ll enter a dark, handsome cocktail bar. But make your way back and you’ll suddenly find yourself in a bright and airy dining room, almost like a chic Route 66 pit stop.</p>
<p>The menu is nostalgic with only the best of the US: grilled-corn chowder, prime rib (for two), Kansas City ribs, pecan pie, bourbon bread pudding, and cheesecake… Who says Americans don’t make good food? There is just one “so-British” exception: the giant roast they serve up on Sundays.</p>

At Floyd’s, chef Jamie Young is aiming for one thing: glory cooking. Does he succeed? Hands down, because those Kansas City ribs are finger lickin’ good.</p>

A spectacular brasserie in the Grand Parisian tradition, headed by Michelin-starred Chef Christophe Langree. A glorious sun-drenched <em>terrasse</em> on the banks of the Seine. <p>Despite minor uprisings of vegan and vegetarian rebels, Paris is still a carnivore’s capital, where the battle of the boeuf is raging on with burger bars, steakhouses and meaty sandwich joints throwing punches left and right to make it to the next round. But not every viande is made equal. And there are fewer disappointing things in the realm of first-world problems than a tough, overcooked entrecôte or a rubbery, unmemorable bistro burger served with soggy frites. That’s just&#8230;bof.</p>
<p>Enter the newest beefy contender, John Viande, who’s showing more than enough meat flex to stand up to his bloody competitors.</p>
<p>Recently settled into the burgeoning rue de Paradis, this casual, modern gastropub is hard to classify &#8212; not quite totally hipster yet undeniably à la mode. Regardless, co-owners Alex and Aurélien pull off the final result well, which is essentially a relaxed bar and eatery that offers people a place to chill, mingle, see and be seen in a one-for-all atmosphere sans affectation.</p>

<p>Although the main dining room and bar area has a decidedly masculine air with authentic animal skulls mounted on the walls and a gentleman’s pub kind of feel, the dimmed lighting, brick walls and tasteful wood furnishings make it perfectly appropriate for bringing your meuf around or for eventually crossing a pack of meat-loving Parisian she wolves at the bar.</p>
<p>The second dining room below is slightly more cozy and quieter with larger tables to accommodate groups. But all that takes backseat to the menu, filled with succulent meat dishes in every form, inventive burgers and a wine/cocktail list that heavily suffices as liquid accompaniment (plus beer on tap, of course).</p>
<p>The carte features prime meats mainly of French origin, but when chef Aurélien can get ahold of some good Scottish or English cuts, he’s not one to refuse. If you have any hesitations or know nothing about beef, don’t hesitate to ask for his guidance. He can tell you which kind is in season, when and how it’s prepared, down to every last fleshy detail.</p>

<p>The cuisine is a creative amalgam of regional-inspired recipes, including tender duck filet cooked with sichuan beads and arranged neatly over a pile of potatoes prepared à la Sarladaise, sliced Pata Negra and fried egg on a bed of Padron peppers from the Galicia region, beef tartare flavored with parmesan, olive oil and shallots, and the generous onglet de boeuf to be drizzled or drenched in a Fourmé d’Albert cheese sauce, flanked with a salad and homemade fries. Dressed-up raviolis, a baked egg dish, and foie gras round out the starter options.</p>
<p>If you’re fiending for a burger, select any of the six original recipes. We’re already planning a return trip to test the Umami topped with ricotta doused in truffle oil, onion confit, slow-roasted tomatoes and portobello mushrooms. If you have simpler tastes, try the Simple Jack with American cheese, spring onions, and Jack Daniels’ secret sauce.</p>

<p>While Aurélien is busy prepping your food in the kitchen, his associate Alex will take care of all your liquid nourishment, as he pops bottles and slings his original cocktails behind the impressive wood bar. On weekend nights (starting with Thursday Afterworks), you can stick around after dinner for some prolonged papotage in a pub-like atmosphere that isn’t crawling with Anglos or tourists.</p>
<p>Bottom line ? The food and drinks here are seriously good, but it’s not a place where you have to take yourself seriously. And if you’re thinking of giving up meat anytime soon, at least visit John Viande once before you do. You just might give it a second thought…</p>

<p dir="ltr">The art of eating and drinking in Paris is equally as important as the art practiced by those providing the nourishment. A six-ingredient cocktail, for instance, should be sipped leisurely, not thrown back in one gulp like a shot or guzzled like a beer. A plate of spiced duck tartare with a side of Thai coleslaw should be thoughtfully chewed and savored, not scarfed down like a street crêpe to cure a quick faim. Likewise, the care that goes into creating cocktails and innovative cuisine needs to be skillfully applied by masters of their trade, otherwise known as artisans.</p>
<p dir="ltr">Relative SoPi newcomer Artisan is all about good food and beverage, while providing a classy, relaxed setting for those looking to hone their consumption skills. Opened up by the guys behind La Maison Mère (Thomas Kolnikoff and John Sellam) in collaboration with seasoned bartender Frédéric Le Bordays, the bar is a rustic refuge for neighborhood locals and well-heeled twenty- to thirty-somethings wanting to take the edge off.</p>

<p dir="ltr">Brick and wood accents complement minimalist surroundings with old-fashioned décor, while laid-back tunes and friendly servers make for a chill atmosphere, ideal for hanging out with friends, colleagues or casual dates.</p>
<p dir="ltr">The wraparound bar and high-top tables up front are prime spots for sharing a bottle of natural wine or testing out Frédéric’s imaginative cocktail list, composed of revisited classics and perfected modern recipes. His cocktail prowess runs so deep that he has released his own book, “Les Nouveaux Cocktails Classiques,” which might as well be referred to as the new Bible for budding amateur bartenders.</p>

<p dir="ltr">No apéro is complete without something to munch on, which is where the menu of prepared small plates comes in. The selection encompasses a variety of artfully presented gourmet dishes made with in-season ingredients suitable for all appetites. Currently up for taste testing : Galician mussels with salted butter and spinach, a shaved pile of 16-month matured Jambon de Bayonne, a serving of creamy burrata with tomatoes and roquette relish, a refashioned Croque Signore topped with caponata, ricotta and jambon blanc, and a juicy cut of seared red tuna perched on a bed of niçoise-inspired garnishes, among others.</p>

<p dir="ltr">Unlike the other tapas &amp; cocktail ventures of its kind, Artisan refreshes everything on its menu every three weeks. That means new wines, new beers, new cocktails and new epicurean delicacies to try out each month, and on top of that, the bar is now open for Sunday brunch with a “terre and mer” theme, based around seafood and earthy dishes made with artisanal products.</p>
<p dir="ltr">The 25-euro formule gets you two savory dishes au choix, dessert, a detox cocktail or fresh-squeezed juice and exotic filtered coffee or tea. Pair the parmentier de canard (terre) with a brandade de cabillaud (mer), a homemade waffle with a side of chocolate sauce and Chantilly cream for dessert and a Courgette Power detox cocktail. That plus Tanzanian Arabica espresso, and you’ve found yourself a new haven for Sunday hangovers.</p>

<p>Le Baron crew just announced their artistic take over of one of our favorite places in town: La Pérouse.<br />
Located on the docks of the left bank, La Pérouse is a mythical mansion from the 18<sup>th</sup> century that used to be an intellectual hotspot (Victor Hugo and Maupassant, among others, used to hang out here).<br />
In more recent history, this slightly overpriced restaurant (with private dining room) /cocktail club had a random life unworthy of such an amazing setting.<br />
So Le Baron team took on the huge responsibility of doing it the right way.<br />
The plan: a Gentlemen’s club-style piano bar, DJ sets and absinth cocktails&#8230;</p>
<p>It might finally be the place on the left bank for a pre-drinking party before the Montana, Castel or Don K,</p>
<p>A lot of expectations, so let’s hope for the best!</p>

The temple of organic goodness and locally sourced menu offers up bio-based goodies for breakfast, lunch and tea time. Get there before noon for a healthy bowl of granola and maple syrup nestled in creamy yogurt or soaked in soy milk. Light and savory lunch options include quiche and salad, seasonal risotto, assorted veggie plates and organic meat-based dishes. And last, but certainly not least, tea timers have a wide selection of cakes and pastries to choose from, notably the famous carrot cake, petites scones and fruit tarts decorated with powdered sugar, caramel and nuts. Owners Samuel Nahon and Alexandre Drouard have been supplying some of Paris’s best restaurants (Septime, Frenchie) for years with products from local French growers. Their finds are rare and affordable, which is a rarity in itself. Get your veggies in with some Pontoise cabbage and Pardailhan turnips. Then hit up the butcher shop for succulent organic milk-fed lamb from the Pyrénées, wild duck, matured chickens or various cuts of pork from Kintoa (Basque region of France). If red meat’s not your thing, raid the seafood section, which offers freshly arrived fish from Saint Jean de Luz or l’île d’Yeu. Round out your meal with the right spices, high quality cheese and natural wine, and you’ll have everything you need for a Michelin-star meal in the comfort of chez vous.</p>

<p dir="ltr">A Parisian institution for the health-conscious, Guen Mai is part-shop, part-restaurant offering a mostly vegan organic menu with a few fish dishes to please the flexitarians out there. The outer façade is deceptively understated and more closely resembles a stand-alone health supplement store or bio épicerie. But it would be a shame to pass up lunch at the macrobiotic restaurant inside, as the Japanese-inspired health dishes are enough to attract the likes of celebrities, including Natalie Portman and are filled with foods that won&#8217;t make your body look like a used punching bag nor feel like one. Dining out is hard enough with the overabundance of heavy meats, butter-soaked vegetables and pounds of cheese used liberally in typical restaurant cuisine. So it&#8217;s a real breath of fresh food you&#8217;ll be inhaling off of copious plates packed with raw, cooked, grated or chopped veggies, spring rolls, veggie tarts, brown rice, millet, tofu noodles and daily specials, among which we recommend the steamed fish, Seitan brochettes or the pillowy Tofu ravioli. And why not hit up the dietetic épicerie on your way out for some agave syrup or tamari to continue your health kick at home ?</p>

<p>The notion of a long boozy lunch is about as Australian as a game of cricket on Christmas. In Paris, however lunchtime has a well-observed time frame of 12.30-14.00pm. So when friends from home come to visit they are often shocked to find they are being shown the restaurant <i>sortie </i>well before the sozzling has started. Luckily (or perhaps not so for the establishment) I can now direct them to Haï Kaï; the hip new Canal-side restaurant that opens its doors from 10am til midnight, 6 days a week.</p>

<p>Haï Kaï (a reference to a form of traditional Japanese verse) is the new venture by the fabulously diverse threesome, chef Amélie Darvas (ex Bristol, Meurice, Ami Jean), foodie/wine connoisseur/photographer Gaby Benicio and comedian/interior decorator Elsa Kikoïne.</p>
<p>Don’t be fooled by the tagged-up façade – the sleek, light-filled interior is all hardcore <a href="http://www.vogue.com.au/fashion/trends/what+is+normcorer,30155">normcores</a> sipping Chablis and eavesdropping on the open kitchen. Indeed Haï Kaï has all the elements of a successful bobo hangout with its Scandi design, delicious, light, innovative flower-topped dishes and peonies on the counter in as many shades as there are styles of Nike Air Max under the tables.</p>

<p>Darvas serves up ever-changing dishes that are equally as stunningly on the palate as they are on the plate. We devoured our delightful prix-fixe lunch menu (€17 for two courses or €23 for three), which included a serving of juicy tender pork with the most incredibly moreish mustard mash, line-caught mackerel and a mouthwatering coconut lime crème brûlée, while basking in the sun filled room overlooking Canal Saint Martin.  Beautiful, unpretentious food, in a stylish, welcoming space – Haï Kaï is indeed a welcome addition to the canal-side community.</p>

<p>Overhearing someone wax lyrical about their latest cupping session, debating various methods of extraction or the merits of a cold drip, you may be forgiven for thinking they were talking about day spa treatments.  But, thanks to an influx of highly skilled and passionate baristas, coffee-centric catchwords like this have become standard in Parisian café banter. It is safe to say that the days of bad brews in this city have <i>bean</i> and gone.</p>
<p>These days in Paris, all the cool kids are ordering chemex.</p>
<p>Boot is the latest by-product of the Parisian coffee revolution; and this little Marais-based hole-in-the-wall café just couldn’t be more delightful.   At only 4m² Boot café is (somewhat ironically) a literal shoebox, but the owners – a furniture designer by the name of Phil Euell and his fashion-industry partner Elsa Dahan &#8211; have managed to create a sleek and welcoming little hangout.</p>

<p>The pair set up shop in what was once a shoe repair studio (I guess you could say the old cobbler got the boot) and have retained the charming blue shop-front with its original <i>Cordonnerie </i>sign<i>. </i> Meanwhile Euell, who designed the layout of the interior and built much of the furniture including the counter, tables and shelves himself, has transformed the interior into a beautiful light-filled little space complete with white tiles, colourful chairs and marble bench tops.</p>
<p>The coffee by Belleville Brûlerie is (needless to say) amazing, as are the ridiculously moreish sweets by Emperor Norton (the prevalence of these amongst great coffee shops in Paris is becoming a problem as I have now developed a worrying daily 3pm craving for the EN chocolate chip oat cookie).</p>

<p>What do you do when tu as la dalle and you&#8217;re stuck in Pigalle ? Just say no to the ubiquitous kebab and crêpe stands because there&#8217;s a new Japanese cantine in the neighborhood that&#8217;s serving up a tasty, affordable antidote to your roaring faim.</p>
<p>Peco Peco, which non-incidentally is a Japanese expression to indicate feeling quite ravenous, steps outside of the Bento box with a crunchy new take on brochettes and a menu that does out-of-the-ordinary things with Wasabi and bread crumbs.</p>
<p>Specializing in Donburi (rice bowls) during the day and Kushiagé (breaded meat or veggie skewers) at night, the cozy eatery niched away on rue Jean Baptiste Pigalle is a refreshing, authentic alternative to the old sushi standbys, swapping out raw fish for cooked and crispy delicacies.</p>

<p><span style="font-size: 14px; line-height: 1.5em;">For lunch, sit down to a bowl of fried chicken, teriyaki salmon or vegetarian Donburi, each garnished with colorful, exotic ingredients on a bed of fluffy white rice. Or make it a baguette Katsusandwich filled with breaded pork and red cabbage dressed in the house BBQ sauce. If you&#8217;re still hungry, dig into the homemade sesame mocha panna cotta or the lemon quatre-quart to finish.</span></p>
<p>When night falls, the menu shifts to Kushiagé with a well-rounded selection of fried veggie, meat, seafood and cheese brochettes plunked down into a wooden serving block for sharing or hoarding. We tried a few from each category and were especially pleased with the Shiitake mushroom, pork, bacon-wrapped asparagus, honeyed goat cheese and Wasabi chicken. Neither overly greasy nor too heavy, the breading&#8217;s crackly texture balances nicely with the soft, steaming interior goodness.</p>
<p>Three to four skewers per person makes for a satisfying meal accompanied by any of the sides, which include Edamame beans (also served as a healthy amuse-bouche), Yaki Onigri (grilled rice ball), Daikon salad, or a half-portion of the Katsusandwich.</p>

<p>Run by Benjamin (previously chez Les Pères Populaires) and his buddy, Chef Kenji (Nippon native and former pastry chef at Fogon and Ze Kitchen Galerie), the restaurant provides that kind of homey, relaxing backdrop ideal for a casual date or a family-style meal with friends.</p>
<p>With miniscule prices, you can dine like a Parisian pauper and leave with the belly of a king, so the next time you tell yourself &#8220;Miso hungry,&#8221; remind yourself the correct phrase is &#8220;Peco Peco,&#8221; and give the place a try.</p>

				<content:encoded><![CDATA[<p>While the French seem rather lackadaisical about the word-wide trend towards clean, organic, raw eating, they appear to have embraced the dude food movement with open arms.  Dude Food (formerly defined as calorie-laden snacks enjoyed by sport-watching men) is being reinvented by a new generation of young chefs who are putting the funk back into junk.  Manapés, souped-up sliders, epicurean empanadas and haute-dogs are taking over where deep-fried chicken wings and chilli left off.</p>
<p>And never fear ladies, despite the name it ain&#8217;t all about the snaggers. You can have your fried snickers bar cake and eat it too (Carla Bruni-Sarkozy was famously caught downing numerous smoky chili dogs on a former political trip to Washington DC).</p>
<p>So dude up, and get on the bandwagon.</p>
<p><b>1.   </b><b>The gourmet kebab from Grill</b><b>é</b></p>
<p>A gourmet kebab shop why didn&#8217;t I think of it first? This is the thought that crossed my mind when I surveyed the long line of punters outside Grillé on a rainy Wednesday lunchtime.</p>
<p>The solid ménage Ã  trois behind this ingeniously simply concept: Frédéric Peneau of Le Chateaubriand fame, Marie Carcassonne and <i>boucher du jour</i> Hugo Desnoyer, have got the mix just right. They serve high quality produce (pork, veal and suckling lamb by Desnoyer and herbs by Annie Bertin, all nicely wrapped up in a homemade organic flour pita) in a small chic setting (by Clément Blanchet, who designed Le Dauphin), with quick, friendly service. What more could you want?</p>
<p>Kebabs are served with a choice of two sauces: fromage frais and horseradish or green tomato and pepper, and adequately greasy finger-licking French fries.</p>
<p>Shish, it&#8217;s a darn good kebab, that&#8217;s all I can say.</p>

<p><b>2.   </b><b>The arepas from Bululu Arepera</b></p>
<p>This trendy little hole-in-the-wall canteen brings a little bite of Venezuela to Paris. The team serve up exceptional little arepas (gluten-free corn pancakes) overflowing with hearty ensembles &#8211; think pulled pork, sausage, black beans and minced beef, Venezuelan cheese, tomato, cucumber and avocado, to be followed by moreish plantain chips and washed down with a rum-based cocktail in an artisanal jar.</p>

<p><b>3.   </b><b>The burger from Blend</b></p>
<p>An oldie but a goodie. There is a constant heard of pretty young punters grazing out the front of this haute-Marais hangout just waiting to get their mitts on one of Blend&#8217;s famous burgers. And they have good reason: with freshly baked brioche buns, home-made ketchup, home ground cuts of meat chosen by esteemed Paris butcher Yves-Marie le Bourdonnec (Blend is named after the secret mélange of meat he puts in his patties), and homemade potato and sweet potato fries &#8211; the burgers from Blend simply never cease to please.   The Smoke (beef, smoked cheddar, homemade ketchup, mustard and honey) is a definite crowd pleaser, as is the more Gallic inspired Signature (beef, bacon and balsamic caramelized onion compote, bleu d&#8217;Auvergen, emmental and spinach) and there are vegetarian options for the less bovine inclined.</p>

<b>4.   </b><b>The fried chicken sandwich from Verjus Wine Bar</b></p>
<p>I almost want to leave this section blank, as words simply cannot do justice to the fried chicken sandwich at Verjus Wine Bar. It is insanely good. And certainly not any old Colonel Sanders could whip up this little bad-boy; chef Braden Perkins brines the chicken overnight and twice-fries the nuggets to get a ridiculously crispy, juicy, tender, saporous taste sensation before nestling it, amidst a sneaky little slaw, in one of Emperor Norton&#8217;s <i>pain au lait.</i></p>
<p>The confit wild boar sandwich with red cabbage sauerkraut, spicy mustard and arugula, and the duck meatball baguette with carrot slaw, sweet and sour vinaigrette and cilantro are, likewise, immensely enjoyable.</p>
<p>The 15€¬ lunchtime meal comes with one of these rad sandwiches, a drink, and a snickerdoodle (!) cookie or caramel brownie, which you do not need but polish off anyway, because it would be a crime not to.</p>

<b>5.   </b><b>Everything from Frenchie-to-Go</b></p>
<p>Everything on this US-centric menu qualifies as deliciously delectable dude food; from the hearty smoked bacon and egg English muffin, to the bacon and maple syrup scone, from the relish-topped pure beef brioche bun hotdog, to the sky-high pastrami on rye, from the mouth-watering pulled pork sandwich to the ambrosial beurre blanc covered lobster roll.</p>
<p>And I won&#8217;t even start on the hand-selected internationally imported craft beer carte.</p>
<p>The youngest addition to Gregory Marchand&#8217;s rue du Nil empire (which includes the exceedingly popular and forever full restaurant Frenchie and the equally as popular, no reservations wine bar Frenchie Bar à  Vins), Frenchie-to-go is simply a must-go.</p>

<p>Sometimes life doesn&#8217;t turn out the way you planned it. Sometimes, you grow up, land the 9 to 5 job like you&#8217;re supposed to and realize you&#8217;re nowhere you wanted to be. Or maybe you like what you do, but you find yourself daydreaming of giving it all up and opening up your own restaurant in Paris. It takes balls to do something like that.</p>
<p>And in the case of former mÃ©tro-boulot-dodoers turned Parisian restauranteurs SalomÃ©e Vidal and JÃ©rÃ©mie Kanza, they&#8217;re the kind of balls you eat.</p>
<p>What usually gets thrown into a bed of spaghetti noodles or threaded onto Yakitori skewers at your local Jap is now a stand-alone commodity at the first of its kind, self-named restaurant Balls on rue Saint-Maur.</p>
<p>The all-balls menu (or if you&#8217;re on the prude side, the politically correct word in French is &#8216;boulette&#8217;) is dedicated to 5 different recipes, four of which are meat-based (beef, lamb and pork of French origin or chicken from Belgium) and one vegetarian (eggplant and chickpeas).</p>
<p>SalomÃ©e and JÃ©rÃ©mie, who each grew up with a mutual affinity for boulettes, devised the menu themselves, using traditional family recipes and tested out new ones, highlighting international flavors.</p>

<p>The balls come in servings of 5, nestled in a bed of the homemade sauce of your choice (tomato- or yogurt-based). Melded together with bread crumbs and egg, the grilled meatballs are firm on the outside, soft and moist on the inside and properly seasoned and spiced.</p>
<p>Perfect for group feasts, order one of each flavor to share, and raid the varied collection of sides, including lentilles with feta and courgette, mashed sweet potatoes, mushroom risotto, creamy polenta or a crunchy salad of endives and citrus fruits.</p>
<p>The beef version livened up with flat-leaf parsley and onions was dignified of its bestseller status, particularly when enrobed in the tomato sauce, which we sopped up dry with the accompanying crusty baguette slices. A side of the mashed sweet potatoes made for more dipping pleasure.</p>
<p>We also tested the tasty lamb balls, laced with cilantro and pine nuts and more suited to the creamy yogurt herb sauce. The mushroom risotto was just right as a rich, filling complement.</p>
<p>The drink menu is short and sweet, composed of natural wines, craft beers and original â€˜Ballsâ€™ cocktails.</p>

<p>Stop in for the economical lunch menu at 13,50 euros which includes a bowl of balls, sauce, a side and soft drink, or opt for the 8-euro meatball sammy made with tomato sauce, herbed butter and roquette.</p>
<p>The place is already packed for dinner, so be sure to call ahead and reserve. If not, get your balls to go.</p>
<p>And in what might be a surprisingly bonne nouvelle for the dudes in Paris, it turns out chicks dig balls, or at least that&#8217;s the impression you get when surveying the compact resto filled with tables of cute girls, happily indulging in the round delicacy (while probably comparing them to yours).</p>
<p>So go on, grow a pair and give Balls a try. At the very least, we can credit the place with giving a whole new meaning to the phrase &#8216;Eat my balls&#8217; &#8212; pun intended.</p>
