Ultra-cool Marais coffee shop and concept store The Broken Arm has invited curators Thomas Erber and Antoine de Beaupré to present 12X21, an all-summer photography exhibition.

Featuring a collection of 15 photographs by 15 world-renowned artists, 12X21 brings together an exhibition of unstoppable energy.

Each piece, charged with (at times ironic) sexual tension, has achieved an incredible compositional balance. Sonia Sieff’s “Les Jambes Des Femmes Sont Des Compas” echoes of raw sex, dripping with electronic heartbreak. The contrasting image “The Garden” by Elina Kechicheva sings of past summer days of water gun fights and real family feuds all played out in the American back yard. Shocking or intimate, each photograph carries enormous and exciting potency.

Within the setting of The Broken Arm, where this season Marni hangs near Alexander Wang sandals and Carven kicks, the youthful energy plays together to create the most intoxicating photography exhibit in Paris this summer.

Next time you’re planning lunch or coffee with a friend, make The Broken Arm your go-to spot. The art is alive, the food is delectable, and the rest of the shop is absolute eye candy. Or perhaps the next new thing to go in your closet.

After being a stylist for fashion labels such as Saint Laurent, Rambert Rigaud chose to open a flower shop and is now using his creativity to elaborate (éviter la répétition de create) amazing flower installations/compositions ?. This season, the designer was invited by the Tom Greyhound concept-store to adorn its space over a single blossom. A great excuse to organise an opening cocktail inside the well-located venue.

Overhearing someone wax lyrical about their latest cupping session, debating various methods of extraction or the merits of a cold drip, you may be forgiven for thinking they were talking about day spa treatments.  But, thanks to an influx of highly skilled and passionate baristas, coffee-centric catchwords like this have become standard in Parisian café banter. It is safe to say that the days of bad brews in this city have bean and gone.

These days in Paris, all the cool kids are ordering chemex.

Boot is the latest by-product of the Parisian coffee revolution; and this little Marais-based hole-in-the-wall café just couldn’t be more delightful.   At only 4m² Boot café is (somewhat ironically) a literal shoebox, but the owners – a furniture designer by the name of Phil Euell and his fashion-industry partner Elsa Dahan – have managed to create a sleek and welcoming little hangout.

The pair set up shop in what was once a shoe repair studio (I guess you could say the old cobbler got the boot) and have retained the charming blue shop-front with its original Cordonnerie sign.  Meanwhile Euell, who designed the layout of the interior and built much of the furniture including the counter, tables and shelves himself, has transformed the interior into a beautiful light-filled little space complete with white tiles, colourful chairs and marble bench tops.

The coffee by Belleville Brûlerie is (needless to say) amazing, as are the ridiculously moreish sweets by Emperor Norton (the prevalence of these amongst great coffee shops in Paris is becoming a problem as I have now developed a worrying daily 3pm craving for the EN chocolate chip oat cookie).

If you’re lucky enough to nab one of the three small tables take a seat and have a chat with the very charming barista Rachel while you sip your cortado. Otherwise grab your coffee-to-go because, as the sign on the window explains with true Nancy Sinatra finesse, these coffees are made for walking.

Fondation Café

Hipsters may have ‘ruined Paris’, but this new kale-loving, steel-cut-oat-eating brand of young things have certainly done wonders for the city’s once woeful – if not altogether non-existent – coffee culture. And for that, I shall be eternally grateful.

Chris Nielsen, formerly of Ten Belles, is the latest bright young hipster spark to be making waves on the Paris cafe scene with Fondation Café; the espresso bar he opened in October this year. The charming antipodean expat has been creating a veritable storm in a lovely green coffee cup of late – serving up smooth brews, and fruity filters from behind the counter of his cosy, light-filled, Haut-Marais haunt.

The stripped-back interior, with its light wooden stools and tables, and sparse concrete bench top leaves the limelight to what is undoubtedly the main event in this intimate little coffee shop is the enormous spaceship-esque Kees van der Westen Spirit coffee machine, which Nielsen proudly informs me, is the first of its kind in Paris.

The coffee, from Parisian coffee roasters Belleville Brulerie, recently launched by Thomas Lehoux (Ten Belles), David Flynn (Le Bal and Telescope) and Anselme Blayney (Le Bal and Ten Belles) is, as one would expect, the perfect blend of smooth, complex and rich, and the banana cake by sweet-treat extraordinaire Emperor Norton was totally moreish.  Also on the menu: granola, toast with avocado (yay!) or ricotta and honey, as well as a selection of cakes, cookies and tarts.

It’s fair to say that with brews and banana bread as good as these, this hipster certainly ain’t getting a roasting from me.

What are you doing in Paris?

I am the chef at the Mary Celeste and I have been here for about 7 months. Things seem to be going pretty well…so far.

Why did you come here?

Well, I came here because I wanted to learn French food actually, and this job came and I am not cooking French food, voilà! My first job was in a Thai restaurant, one of the best in Canada. After that I went cooking in Copenhagen for another year and a half. I was cooking in a place called Kiin Kiin, the only Michelin star Thai restaurant. So my background is Asian food.

Do you travel to complete your food education?

Yes, that’s the very nice thing about cooking. You can go anywhere and you don’t need to speak that much. You just need to know some words like “vegetables” and “oui, chef”. That’s an amazing job for travelling and learning.

That’s the reason you chose this job?

I think so…But mostly because I just love food. I did not think  “I want to travel” but just “I want to cook”. But travelling is one of the very nice things about the job, for sure.

What did you learn about creation in the different kitchen you cooked?

It depends in what restaurant you’re in, what chef you’re working for. For example, when I was working at the Michelin place, in Danemark, they use very local food. So they get inspiration from traditional Danish ingredients. And like in most Michelin places, you try to make the food interesting, to surprise customers with something they never have tried before. When I am in an Asian restaurant, the main focus is that the food needs to be delicious. That’s how personally I like to cook and that’s how I get my inspiration for cooking. It does not have to be interesting, it does not have to be new, it just has to be delicious. People eat it and they want to come back and eat it again. And remember it. That’s how every dish is created here.

How do you determine it is “delicious”?

Most things we try. I taste it and the other cooks taste it. For me, when you eat something, you say it is delicious because you want to eat it again, you want more of it. You can go to some restaurants, taste something and say “oh, it’s interesting” but maybe you forget it the next day or you do not remember what you had. For mev delicious means you enjoy eating and you want to have it again.

Do you want to make people addicted?

Yes, exactly, I try to make the food like drugs you know.

I read something about big labels in the U.S food industry. They do not try to make people enjoy it too much but just make them want more. [Food, sugar, salt : how the Food Giants hooked us]

[Laughs] I am not like that! There are things that are classic, for example in French cuisine, like a steak-frites or a tartare. People have been cooking that for a hundred years because people love it and come back to it. And my idea is that you have that same feeling when you are eating my food, you want to want to keep on eating it.

Do you have the recipes in mind before going grocery shopping?

No, we work with Terroirs d’Avenir, which is an amazing supplier. What they have changes all the time. We just order something that looks nice and then you kind of “hop hop hop” in your kitchen to make it taste good.

Does the menu change everyday?

There are some things, which are going to stay for a while, for example the endives salad, which has become one of our big things. But the menu will never be the same. There will be new dishes every day for sure.

What is your favorite product right now

The white and green asparagus are amazing. We have just got the first-of-the-season artichokes, they are beautiful. It is almost impossible to get stuff like that in Canada. We have markets there but the country is so big that even if you have fresh products, it’s going to take hours to get there or even days…So the products are never as good as they are here I guess.

How would you describe the Mary Celeste?

Obviously, it’s a bar and we opened as an oyster bar. But me personally, I would really want it to be known for more than just oysters. My cooks and I are working here for more than 14, 16 hours a day and I think it is not fair to them to say it is just an oyster bar.

It is a marketing concept…

Yes, a marketing concept, I know. But it terms of the food, all the stuff here are little plates for sharing, that’s how I really love to eat, that’s how I grew up eating.  I guess it is “fusion” food, but actually for me, when I look at it is more driven by if it is delicious or not. If I am making something which I think will taste good and that does not have ginger or soy sauce, that’s fine! If it needs soy sauce, it is going to have soy sauce. I guess it is fusion but at the same time I have no problem putting things on that are not Asian at all or completely western…

Do you try to match the food with the cocktails?

No, the cocktail menu and the dinner menu are separate, you just come here, you get some food, have some cocktails…

What do people like here?

It is a good space, it looks good, in a great location and I think we have one of the best bartender in Paris, Carlos. I think that in the kitchen, we are also trying to make something different that other places do in Paris. I was not trying to do something new or different but that’s how it is happening. I don’t think you can get this food anywhere else in Paris. Not because I am some amazing chef but just because I have a different background. I am half Chinese, half Romanian, grew up in Canada, I lived in Korea, in Danemark and now in Paris, all these influences came to my cuisine. Most of the chefs here are French or white American or Australian, so they have a pretty similar approach.

Do you go out in other restaurants?
Of course! Normally I always go out to eat Chinese. Chez Xu, rue Volta, is a good place. There is a Vietnamese noodles place too, right by chez Xu [Taing Song Heng] and a really good banh-mi, the Vietnamese sandwich [7 rue Volta]. Another secret is a place called Best Tofu in Belleville, 1,50€ for some fresh tofu, amazing. The best restaurant in Paris !  But if it’s not Asian food, my favourite restaurant is Au Passage. The Chef [Shaun Kelly] is Australian. They’re good friends and come here all the time. I just love their food, it is kind of what we are trying to do here but in a different way. Everything you eat, you want to eat it more.

Mary Celeste

Is there some ingredients you are afraid or curious to use?
Yesterday I went to the Verre Volé and it was the first time I ate pousse-pieds. I had no idea what it was, but it was pretty good. I still don’t know how to cook it.

Do you think that French customers are harder to please than in other countries?
French people have a very strong tradition, they can be hard to please. The perfect example is the oysters. Some people are going crazy that we do not have bread, but really crazy [yelling]: “You don’t have bread and butter ?” Actually some people tried to go outside to buy a baguette.

So you keep on not giving bread?

Yeah. I mean, the food here is not really meant for bread. We make pancakes, potato and polenta dishes, I don’t think you need bread. When you go to Spain, to tapas, you never get bread, you just get dishes with bread or potatoes but never get bread to fill in. To be like that “I need bread” is a little bit crazy.

There is a Napoleon law, which says that every restaurant must provide bread and water if the customer asks, no matter what…
Yes, I understand it is part of the culture. Every day of the week you can eat bread but if you come to The Mary Celeste just once, I don’t see what’s the big deal if there is no bread…Some French people will probably killing me after saying this…I hope not. I love bread, I love bread! [laughs]

The Broken Arm

A few months back I couldn’t find a decent coffee anywhere in Paris.  I’d knock back bitter espressos and nurse UHT infused café crèmes and dream of the rich velvety brews of home. I once even ventured into Starbucks (and had to do the walk of shame home with my misheard name ‘Enel’ scrawled across my excessively large grande latte).

These days in Paris Ethiopian/Guatemalan blend short mac is the new (long) black. These days I have enough good coffee shops in my quartier to be discerning and new kid on the block, über trendy café/concept store The Broken Arm in the haut Marais is my latest squeeze.

Based on a shared love of art de vivre’, fashion forward friends Anê¯s Lafarge, Guillaume Steinmetz et Romain Joste opened the large, light filled space overlooking the leafy Square du Temple in February (three years after starting online magazine De Jeunes Gens Modernes), and it has been packed with like-minded young creative types ever since.

The Scandinavian feel concept store stocks carefully selected prêt-à -porter lines from the likes of Phillip Lim, Carven, Otswald Helgason and Raf Simons as well as a range of books, magazines and other beautifully crafted lifestyle items which make it very hard to leave empty handed.

The little café laté is equally as endearing the talented barista whips up incredibly creamy art-topped latte’s, using beans from Norwegian coffee supplier and roaster Solberg & Hansen – while chef Olivier Le Corre creates simple, mouthwatering dishes with an emphasis on fresh, seasonal produce.

Aside from being ridiculously cool, uncontrived and engaging, the owners are clearly passionate about their project – and they have succeeded in creating a warm, convivial space that makes you want to stay for hours.

My arm has definitely been twisted this one’s a winner.

Loustic is a new café, which serves excellent coffee – expresso and Chemex filter coffee, but doesn’t want to be part of the English spoken coffee club. Loustic’s owner Channa Galhenage wants its place to be a café for locals- he is proud that the Radio Marais guys made it their hideout! So, if you want to taste Channa’s exquisite coffee and manners, work hard on your Parisian accent, hide your backpack and leave your MacBook home. The place is cosy and has some good company : Rachel’s cakes, the  Kale Project and this week, Pressing-pressing.

No pale pull-over and socks activists but the trendy Nord-Marais crowd : it looks like Café Pinson just sucked up its neighbour’s – the cool Nanashi – clientele, thanks to its innovative, refreshing food. Order a smooth juice Air frais, (spinach, apple, carott and fir tree essential oil), and enjoy it in the bright and cosy space created by Dorothée Meilichzon.

Ann Grim was raised between Paris, Buenos Aires, Montevideo, le Cap, and London. This cosmopolitan girl thinks about luxury and comfort in a unique and exceptional way, always looking for a new way to use furniture. That’s how the caviar and vodka bed was born, and that’s why we came to the opening at the Nuke gallery for some vodka.

As expected, the “Take Me Out” fair was full of surprises. Talkative people, crazy girls and good food might explain part of its success. Over the past few months, this event has become kind of an institution when it comes to featuring emerging designers. Their perpetually renewed creativity makes this fair never boring. There is no doubt about it, many of them will thrive soon. Be prepared!

It might be the end of summer, but parties are back in Paris! The Bon Gamin crew (Myth Syzer, Loveni & Yann Ichon) teamed up with the Lomography Gallery Store for a chill cocktail party. They both had new surprises to release: energical punchlines for the French rappers, and the new Diana camera for the latter. It was definitely the occasion to meet new people and sip some Demory beers -the ultimate Parisian beverage.
